Chicken Pasta Fiesta
1 Pound of chicken tenderloins
1 Teaspoon of salt
1 Teaspoon of black pepper
1 Teaspoon of paprika
1 Tablespoon Oil
1 Teaspoon of minced garlic
¼ Cup of diced celery
¼ Cup of diced red pepper
¼ Cup of diced onions
¼ Cup of diced green peppers
¼ Cup of corn kernels
2 Cups Linguini cooked
1 Tablespoon of Lemon Juice
1 Tablespoon of Parsley
1 Teaspoon of Basil
Season chicken with salt, black pepper, and paprika.
Heat oil, cook chicken until done. Add garlic, vegetables, cook 3 minutes, or whenever vegetables are done. Add remaining ingredients. Serve.
Antipasto Rollup
2 Ounces of julienne Ham
2 Ounces of julienne Turkey
2 Ounces of julienne Provolone cheese
2 Ounces of julienne Salami
¼ Cup of shredded carrots
¼ Cup of diced pickles
¼ Cup of julienne green peppers
¼ Cup of julienne roasted red peppers
2 Cups shredded lettuce
4 Flour tortillas
Italian dressing
Combine all 9 ingredients, divide into 4 equal parts. Rollup in tortillas, and serve dressing as a dipping sauce.
Ranch Dip with Vegetables
½ Cup Sour Cream
½ Cup Mayonnaise
1 Tablespoon dried dill weed
2 Tablespoons dried onion
Combine these ingredients an let sit 10 minutes. Serve with:
* Pita bread
* Cucumber slices
* Carrot sticks
* Celery sticks
* Broccoli florets
Chicken and Broccoli Alfredo
2 Tablespoons of Butter
1 Pound of Chicken diced
¼ Cup of diced roasted red peppers
2 Cups of Broccoli florets blanched
2 Cups of penne pasta cooked
½ Cup of heavy cream or condensed milk. (Water with 1 tablespoon of corn starch may be substituted).
½ Cup parmesan cheese
Blanch Broccoli in boiling water, remove.
Cook pasta in same water, remove.
Dump water
In fry pan, heat butter, cook chicken until done.
Add heavy cream or condensed milk or water with corn starch, broccoli, pasta, and pepper, heat to boiling.
Add parmesan cheese, mix and serve.
Bananas Foster
2 Sliced bananas
2 Tablespoons of butter
2 Tablespoons of brown sugar
1 Can whipped cream
Heat butter in fry pan. Add brown sugar. Add bananas and heat 2-3 minutes
Serve with whipped cream or over ice cream.
Beef Chili Soup
1 Pound ground beef
¼ Cup chopped onions
¼ Cup chopped carrots
¼ Cup chopped green peppers
2 Teaspoon of minced garlic
1 Cup of canned kidney beans drained
1 Cup diced canned tomatoes
1 Cup crushed tomatoes
1 Cup beef stock (Made from bouillon cube)
1 Teaspoon chili powder
1 Teaspoon Black pepper
1 Tablespoon Worcheshire Sauce
Cook Beef until done. Drain off fat. Add other ingredients cook 15 to 20 minutes until done. Add water if starts to dry out.
Golden Gate Burger
½ Pound ground beef.
1 Tablespoon of dried tomatoes
¼ Cup finely diced cheddar cheese
1 Tablespoon of BBQ sauce
Mix all ingredients with ground beef. Divide into 2 burgers. Cook until medium well done.
